Sunchoke (Jerusalem Artichoke)

Sunchokes or Jerusalem artichokes are a delicious perennial vegetable. They can be planted almost anytime here since soil does not freeze. Plant in full sun, 2-6” deep, 12-18” apart, rows 36” apart. They are easy to grow and can spread, so plant in a large pot, raised bed or along a mowed area. They’ll be ready to harvest in 120-150 days or after the first frost. They keep in the fridge for 7-10 days and I have found a little longer if left unwashed until used. They are prepared similar to potatoes but with numerous health benefits (see links below.)
